1. Combine the oil, juice from one lime, oregano, and black
pepper in a shallow glass baking dish. Stir. Place the
chicken breasts in the baking dish and turn to coat each
side. Cover the dish and refrigerate overnight. Turn the
chicken periodically to marinate chicken on both sides.
2. Put water, tomatillos, and onion into a saucepan. Bring
to a gentle boil and cook uncovered for 10 minutes or until
the tomatillos are tender. In a blender, place the cooked
onion, tomatillos, and any remaining water. Add the garlic,
peppers, cilantro, salt, and the remaining lime juice.
Blend until all the ingredients are smooth. Place the sauce
in a bowl and refrigerate.
3. Place the chicken breasts on a hot grill and cook until
done. Place the chicken on a serving platter.
4. Spoon a tablespoon of low fat sour cream over each
chicken breast. Pour the sauce over the sour cream.

1. Rinse and pick through the beans. Put the beans in a
large pot and add 10 cups of water. Place the pot in the
refrigerator and allow the beans to soak overnight.
2. Cook the beans until they are soft. Add more water as
needed while the beans are cooking.
3. Add the plantains, tomato, pepper, onion, garlic, and
salt. Continue cooking at low heat until the plantains are
soft.
Option: Serve with rice.

1. Steam broccoli and cauliflower until tender (about 10
minutes).
2. In a small saucepan, mix the lemon juice, oil, and
garlic, and cook over low heat for 2 or 3 minutes.
3. Put the vegetables in a serving dish. Pour the lemon
sauce over the vegetables. Garnish with parsley.

6 small chayotes (christophine), cut in half, lengthwise
2 quarts water
1 cup low fat cheddar cheese, shredded
1/4 teaspoon salt
1 tablespoon margarine
1/2 cup plain bread crumbs
1. Wash chayotes and bring to a boil in water. Cover and
boil at moderate heat for about 1 hour or until fork-tender.
2. Preheat oven to 350°F.
3. Drain chayotes, remove cores and fibrous part under
cores. Scoop out pulp, being careful not to break shells.
Place shells on cookie sheet.
4. Immediately mash pulp and mix with cheese, salt, and
margarine.
5. Stuff shells with the mixture. Sprinkle with bread
crumbs.
6. Bake for 30 minutes.
Yield: 6 servings

1. In medium pan, heat oil and saute onion, garlic, and
rice. Add hot water and salt. Bring to a full boil. Cover
and simmer for 15 minutes without stirring. If desired, add
vegetables, cover, and cook for an additional 5 minutes.
2. Uncover, give rice a full turn and cover again. Turn
heat off.
3. Let stand 15 minutes before serving.

Cake:
2 1/4 cups cake flour
2 1/4 teaspoons baking powder
4 tablespoons margarine
1 1/4 cups sugar
4 eggs
1 teaspoon vanilla
1 tablespoon orange peel
3/4 cup skim milk
Icing:
3 ounces low fat cream cheese
2 tablespoons skim milk
6 tablespoons cocoa
2 cups sifted confectioners sugar
1/2 teaspoon vanilla extract
Cake:
1. Preheat the oven to 325° F.
2. Grease with small amount of cooking oil or use nonstick
cooking oil spray on a 10-inch round pan (at least 2 1/2
inches high). Powder pan with flour. Tap out excess flour.
3. Sift together flour and baking powder.
4. In a separate bowl, beat together margarine and sugar
until soft and creamy.
5. Beat in eggs, vanilla, and orange peel.
6. Gradually add the flour mixture alternating with the
milk, beginning and ending with flour.
7. Pour the mixture into the pan. Bake for 40 to 45
minutes or until done. Let cake cool for 5 to 10 minutes
before removing from the pan. Let cool completely before
icing.
Icing:
1. Cream together cream cheese and milk until smooth.
Add cocoa. Blend well.
2. Slowly add sugar until icing is smooth. Mix in vanilla.
3. Smooth icing over top and sides of cooled cake.
Yield: 16 servings

3/4 cup water

1 piece lemon peel
1/2 teaspoon rum or vanilla extract (optional)
1 pineapple, cored and peeled, cut into 8 slices
2 mangos, peeled and pitted, cut into 8 pieces
3 bananas peeled, cut into 8 diagonal pieces
fresh mint leaves (optional)
1. In a saucepan combine 3/4 cup of water with the sugar,
lemon juice, and lemon peel (and rum or vanilla extract if
desired). Bring to a boil, then reduce the heat and add the
fruit. Cook at a very low heat for 5 minutes.
2. Pour the syrup in a cup. Remove the lemon rind and cool
the cooked fruit for 2 hours.
3. To serve the compote, arrange the fruit in a serving
dish and pour a few teaspoons of syrup over the fruit.
Garnish with mint leaves.
Serve with Homemade Sour Cream (see page 41).

Title: Yuca frita al horno

Use aceite en aerosol para disminuir la cantidad de grasa al cocinar.
1 libra de yuca fresca (cassava), pelada y cortada en pedazos de 3
pulgadas cada uno (ó 1 libra de yuca pelada congelada) aceite en aerosol
1. Coloque la yuca en una olla con suficiente agua fría para que cubra
la yuca y la sobrepase una pulgada. Haga hervir el agua y cocine la
yuca sin cubrir a fuego lento, entre 20 y 30 minutos o hasta que esté
blanda.
2. Caliente con anticipación el horno a 350° F.
3. Ponga la yuca en una tabla de cortar, déjela enfriar y córtela a lo
largo en pedazos de 3/4 de pulgada de ancho, desechando la fibra del
centro.
4. Rocíe la bandeja de hacer galletas con el aceite en aerosol.
Reparta las porciones de yuca en el recipiente y rocíelas con el aceite
en aerosol. Cubra la bandeja con papel de aluminio y cocínelas 8
minutos. Descúbralas y colóquelas nuevamente en el horno cocinándolas 7
minutos más.

Pollo molido y el queso bajo en grasa ayudan a disminuir la grasa y las
calorías.
1 libra de pechuga de pollo molida
1 cucharada de aceite vegetal
1/2 libra de queso mozzarella bajo en grasa, rallado
1/2 cebolla pequeña, finamente picada en cubos
1 diente de ajo, machacado
1 chile verde fresco mediano, sin semilla y picado
1 tomate pequeño, finamente picado
1/2 cucharadita de sal
5 tazas de harina de maíz (masa harina)
6 tazas de agua
1. En un sartén que no se pegue, sofría el pollo en el aceite a fuego
lento hasta que el pollo se vuelva de color blanco. Revuelva el pollo
constantemente para evitar que se pegue.
2. Agregue la cebolla, el chile verde, y el tomate. Cocine la mezcla
hasta que el pollo esté firme. Ponga la mezcla en el refrigerador y
deje que se enfríe.
3. Mientras el pollo se enfría, coloque la harina de maíz en un
recipiente grande. Agregue suficiente agua hasta obtener una masa firme
pero no pegajosa, como para hacer tortillas.
4. Cuando se enfríe el pollo, mezcle el queso y la sal.
5. Divida la masa en 24 porciones. Con sus manos, forme bolitas de
masa, aplaste cada bolita hasta que forme un círculo de 1/2 pulgada de
grosor. Ponga una cucharada de la mezcla de pollo en el medio de cada
círculo y doble las orillas hacia el centro. Aplaste la bolita de masa
nuevamente hasta que vuelva a quedar de 1/2 pulgada e grosor.
6. Cocine las pupusas, por ambos lados, en un comal grueso (o en un
sartén de hierro) bien caliente hasta que se doren.
7. Sírvalas calientes con curtido salvadoreño (vea la página 12).

1. Mezcle en una cacerola grande el agua, el achiote, la hoja de
laurel, la mitad de la cebolla, el pimiento verde y 1/2 cucharadita de
la yerbabuena. Haga hervir.
2. Mezcle en un recipiente el pollo y la carne con la otra mitad de la
cebolla, el tomate, el orégano, la harina de maíz, la pimienta, el ajo y
la sal. Revuelva bien. Forme las albóndigas de 1 pulgada. Colóquelas
en el agua sazonada. Cocine a fuego bajo 30-45 minutos.

Bizcocho:
1. Caliente con anticipación el horno a 325° F.
2. Engrase con pequeña cantidad de aceite o rocíe con el aceite en
aerosol un molde para hornear redondo de 10 pulgadas de diámetro (como
mínimo de 2 pulgadas y 1/2 de alto). Polvoree el molde con harina y
bote el excedente.
3. Mezcle la harina con el polvo de hornear.
4. Bata en otro recipiente, la margarina y el azúcar hasta que la
mezcla esté suave y cremosa.
5. Añada a la preparación anterior los huevos, la vainilla y la cáscara
de naranja.
6. Agregue gradualmente la harina mezclada alternando con la leche,
comenzando y terminando con la harina.
7. Ponga la mezcla en el molde, hornéela 40-45 minutos o hasta que esté
cocinada. Deje enfriar el bizcocho 5 ó 10 minutos antes de sacarlo del

11141 prohibits discrimination o the basis of age by contractors and
subcontractors in the performance of Federal contracts, and Executive
Order 11246 states that no federally funded contractor may discriminate
